Sweet soft Paleo Pancakes
- YIELD: 16 pancakes
- PREP TIME: 5 minutes
- COOK TIME: 15 minutes
Ingredients:
- 6 eggs
- 3 large ripe bananas
- Coconut oil for frying
- 1/3 cup coconut flour
Directions:
- Heat a nonstick skillet over medium heat. (You can preheat over a stove accelerate the cooking process.)
- Place the banana, eggs, coconut flour and 2 pinches of salt in the blender. Puree until smooth. The dough should be thick, but pourable. If it seems thin, add 1-2 tablespoons flour over coconut.
- Brush pan lightly with coconut oil. Pour into a 3-inch circle of dough. Gently shake the pan to distribute the batter into a 4-inch circle. Cook for 2-4 minutes until the bottom of the pancake is golden and the edges are firm.
- Turn gently with a soft spatula, and cook another 2-4 minutes. If funds turn dark, lower the fire a little.
